The seasoning is deliberately minimal - typically just coarse salt and cracked black pepper in roughly equal proportions. This allows the natural beef flavors and smoke to shine through without masking them with complex spice blends. Post oak is the gold standard for Central Texas pitmasters; prized for its clean-burning properties and mild, sweet smoke that doesn't overpower the meat. Meats are smoked slowly at low temperatures (around 225-250°F), developing that coveted dark bark while keeping the interior moist and tender.
