Central Texas Style Brisket

Our pit-smoked brisket is slow-cooked for 14+ hours over Texas-grown post oak, developing a magnificent dark bark that seals in the meat's natural juices. Each slice reveals incredibly moist, tender beef with a deep smoky flavor that's been perfected through generations of Texas barbecue tradition. Seasoned simply with equal parts coarse black pepper and salt, this brisket needs no sauce – though we won't judge if you want some on the side.

Texas Style Pork Spare Ribs

Our meaty spare ribs are slow-smoked over Texas-grown post oak until they're fall-off-the-bone tender and incredibly juicy. Each rack is rubbed with our carefully balanced blend of spices that complements the natural pork flavor without overpowering it. The low and slow smoking process creates a beautiful caramelized exterior while keeping the meat succulent and flavorful throughout.

Texas Style Smoked Beef Sausage

Our beef sausage features a satisfying coarse grind texture that delivers bold, meaty flavor in every bite. Generously seasoned with cracked black pepper and slow-smoked over post oak, each link develops a rich, smoky character with a peppery kick that's unmistakably Texas. The smoking process creates a perfect snap when you bite through the casing, releasing all those savory, spiced juices.

Texas Style Smoked Beef Sausage with Jalapeno Cheddar

Starting with our original beef sausage, we’ve added chunks of cheddar cheese and slices of jalapeno.  As the sausage smokes, the cheese melts slightly, creating pockets of creamy texture that creates a delicious contrast with the coarse grind of the meat.  The jalapeno brings a bright, vegetal heat that balances black pepper's earthiness. It adds moisture and a fresh bite that cuts through the richness of the beef and cheese, while complementing the smoky flavors from the post oak wood.

Smoked Chicken Wings

Our wings are slow-smoked over post oak wood until they're perfectly tender and juicy, with moist meat that practically falls off the bone. The smoking process infuses each wing with rich, smoky flavor while our spicy seasoning blend adds just the right amount of heat. These aren't your typical chicken wings – the post oak smoke creates a depth of flavor that'll have you coming back for more.

Potato Salad

Our traditional potato salad features Yukon Gold potatoes that deliver rich flavor and creamy texture. Made with a classic buttermilk-based dressing enhanced with a hint of tangy mustard and fresh dill, this comforting side dish brings just the right balance of creamy texture and bright flavor to complement your barbecue plate.

Coleslaw

Our traditional coleslaw features finely shredded fresh cabbage and carrots tossed in a rich, creamy dressing that's perfectly balanced between tangy and sweet. This cool, refreshing side provides the perfect contrast to our smoky meats with its crisp texture and familiar comfort-food flavor that pairs beautifully with barbecue.

Candied Smoked Pecans

Our premium pecans are slow-smoked over post oak to develop a rich, deep smoky flavor. We toss the warm nuts in a signature blend of sugar, brown sugar, cinnamon, curry, cayenne, and salt that creates layers of complex taste. The cinnamon provides a warm, familiar sweetness while the curry adds unexpected depth and the cayenne delivers just a touch of heat. These addictive pecans make the perfect sweet and smoky start or finish to your barbecue experience. 

Lone Ridge Red Chili

Our award-winning signature chili is a testament to Texas tradition with a Lone Ridge twist. We start with our smoked brisket, slow-cooked to perfection, then combine it with rich brisket ground meat, hearty stew meat, stewed tomatoes, garlic, spices, beans, and a blend of red chiles. 

Simmered low and slow with our own smoked brisket tallow, this chili develops layers of smoky richness that can only come from true pit-master craftsmanship. Our blend of secret spices creates a bowl that's both familiar and extraordinary.  

Lone Ridge Green Chili

A tribute to Colorado's beloved state dish, our award-winning authentic green chili features tender chunks of pork simmered low and slow with a distinctive trio of fire-roasted Hatch, mirasol chiles, and sandia chiles. Our blend of garlic, tomatoes, and traditional spices creates the soul-warming consistency that Coloradans have been perfecting for generations.
